Winter Warmer

Here’s a nice beef stew recipe I’ve been playing around with for years.
3 pounds of beef chuck, cut into 1 inch cubes
¼ cup of vegetable oil
4 large, sweet onions, chopped
6-8 cloves of garlic, crushed & minced
1 stick of butter cut in half
¼ cup of flour
1 14 oz. can of small dice tomatoes
1 pound crimini mushrooms, […]

F the food Nazis.

Via Instapundit. Bacon and eggs could help pregnant women boost their baby’s intelligence
But the new study suggests that a chemical in pork products and eggs can help the baby’s growing brain to develop.
Scientists at the University of North Carolina have discovered that the micronutrient, called choline, is vital in helping babies in the womb develop […]

What A Way To End The Holidays!

How about that? The local Charlottesville foodie blog, Mas to Millers, just posted a review of my restaurant.
We thought we knew all the top restaurants in Charlottesville and vicinity. Clifton Inn, Duner’s, Mas, Tavola. Maybe Palladio and Ventana, too. Whenever someone asked for a fine dining recommendation, we pulled something off this list. How silly […]

Chef Mojo’s Texas Red Chili Recipe

For all y’all not on Facebook, here’s the recipe that Bill’s been talking about:
Texas Red Chili
Here ya go. This is the basic recipe. There’s quite a bit of improvisation involved in getting it to your personal tastes. This recipe will give you a fairly spicy pot of chili. Don’t be afraid to experiment.
4 lbs. of […]

Christmast 2009 Cooking Thread

This is an open thread. Post anything you’d like about your Christmas and/or holiday cookery - pictures, recipes, ideas, mouth-watering descriptions, general thoughts, reminiscences of old Christmas meals from your youth, anything and everything foody and Xmas.

Announcement

For some reason I have become addicted to Cholula Original Mexican Hot Sauce.
I have no idea why. But I really like the stuff.

Weekend Cooking Thread: Holiday Gift List 2009, and 2006 Reloaded

Okay, folks, here’s that oldie but goodie, the Weekend Cooking Thread Christmas Shopping List.
As usual, I’ve posted a wide range of items and prices - maybe leaning a bit towards the less expensive, in a nod to the current parlous economic times.
Also as always, if you have any suggestions you’d like to add, please do […]

But How Does It Taste?

Scientists ‘grow’ meat in laboratory
Researchers in the Netherlands have created what was described as soggy pork and are now investigating ways to improve the muscle tissue in the hope that people will one day want to eat it.
No one has yet tasted the product, but it is believed the artificial meat could be on sale […]

UN: Don’t Bother Us With Facts

Leaked emails won’t harm UN climate body, says chairman | Environment | guardian.co.uk
Pachauri said the large number of contributors and rigorous peer review mechanism adopted by the IPCC meant that any bias would be rapidly uncovered.
“The processes in the IPCC are so robust, so inclusive, that even if an author or two has a particular […]

Weekend Cooking Thread - Christmas Goodies Edition

I’ve posted this one before, but it’s one of those standards that’s always good for a repeat: Bill Quick’s Best Chocolate Chip Cookies in the World:
8 ounces sweet butter, room temp.
1 cup granulated sugar
1 cup brown sugar
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 x-large eggs

The Weekend Cooking Thread: SHTF Burger Rocks

As most of my readers know, I have become something of a “prepare for survival” enthusiast, not entirely crazy given that I live on top of one of the biggest and most active earthquake faults in North America, a crack that has already rock-n-rolled once to great effect within the past 20 years in my […]

The Weekend Cooking Thread

I miss this thing, so I’m going to try to bring it back.
Okay, today. One of the things to come out of my investigations of things related to preparing for “SHTF” scenarios is the issue of storing various foodstuffs. In general beans and rice are considered to be the two most […]

Cookbook Heaven

Omnivoracious: Amazon Exclusive: David Chang’s Favorite Cookbooks
He also gushed about a cookbook that isn’t even out yet, a mammoth collection by Nathan Myhrvold and Chris Young: “It’s going to be a massive tome that’s going to capture, I guess, everything progressive that’s been cooking. I’m assuming it’s going to be a modern-day Larousse. I’m really […]

Whoopeee!

Instapundit » Blog Archive » Knoxville, Tennessee. Upstairs at the newly reopened (after nearly 30 years of closure) S&W.

I spent too long in the restaurant biz - part of it as a server, part as a cook - not to look at this photo and think to myself, “There’s gotta be some speed involved here […]

Pet Food

Instapundit » Blog Archive » SAVE THE PLANET: Eat A Dog? “The eco-pawprint of a pet dog is twice that of a 4.6-litre Land Cruis…
Victoria University professors Brenda and Robert Vale, architects who specialise in sustainable living, say pet owners should swap cats and dogs for creatures they can eat…..
And just think how much of […]

We’re Number Two!

39 Bay Area restaurants get Michelin stars
Although NYC has 15 more starred restaurants than we do, you can still get a decent meal in and around San Francisco. And the important thing, of course, is that we absolutely kick Los Angeles’ ass.

Call Me Crazy, But…

I happen to be a big fan of Kimchi, and this one sounds good.
I never considered the notion of a kimchi martini - I’ve had a version made with shoyu, and it tasted like kerosene - but maybe a gin or vodka one would go over better.

Fishy

Dishwasher Salmon - Maggie’s Farm
This reminds me of this, both of which raise the question, “Sure, it’s possible, but why?

Oh, Yum!

Jebus, do I ever want to eat here.

Warning: The rest of the pics are extremely NSFD (Not Safe For Dieters).

Happy Happy

I discovered I can bake a nice loaf of cornbread in my solar oven.
Next up: Hand-ground wheat flour used to bake loaves of bread.

Basic Good Eats, San Francisco Style

Joe’s Cable Car Diner (he calls it “restaurant,” but everybody else calls it “diner”) is at Silver and Mission streets, in the Outer Mission district, about as far from the tourista haunts as you can get, and in a pretty much lower economic neighborhood, to boot. It has some rather odd interior decor:

And from […]

Nice Tip!

I love getting a good shopping tip.
A friend and colleague left a message to the effect that she’d seen some good deals on knives at one of our local discount store, TJ Maxx.
Yep. She was right.

That’s a Shun Classic 8 inch chef’s knife. 80 bucks. Normally retails at Williams-Sonoma or Sur La Table of $120.00.
Oh. […]
